Tonnato Sauce

Tonnato Sauce

1 can of tuna, drained

¼ tsp salt or fish sauce

½ cup homemade mayonnaise or Hellmann’s Mayonnaise

¼ cup extra virgin olive oil

1 – 2 tablespoons fresh lemon juice

zest of 1/2 lemon

2 tsp caper brine (optional)

Blend the tuna and salt in a food processor. Add the mayonnaise and pulse until the mixture becomes creamy. With the motor running, drizzle in the olive oil and lemon juice and process until the tonnato is exceptionally smooth and creamy. Adjust for more salt, olive oil or lemon juice and store in an airtight container.
